How is cocoa powder made?
Cocoa beans are fermented, dried, roasted and ground into cocoa paste. This
is used to make chocolate or is further pressed under high pressure. During this
process, cocoa butter is separated, which is used in the food, cosmetic, and
pharmaceutical industries, and the remaining cocoa mass, stripped of its fat
content, is crushed and ground into cocoa powder.
What is the difference between alkalised and non-alkalised cocoa?
Alkalisation, also known as the Dutch process, is a method in which cocoa
beans or powder are treated with an alkaline solution to lower the pH. This
process mellows the flavour, darkens the colour and improves the solubility of
the cocoa. However, it can reduce the content of some beneficial substances,
such as antioxidants. Non -alkalised cocoa, on the other hand, retains its
original distinctive taste, has a lighter colour and a slightly higher nutrient
content.
Method of use
You can use the powder to prepare a drink for immediate consumption. Pour hot
water over the mixture, stir thoroughly and drink. If you’re in the mood for a
cold version, add ice to the prepared drink.
It can also be used in baking or to flavour smoothies or breakfast
