Grape seed oil is one of the rarer seed oils, as it is extracted from the small kernels of the grape (Vitis vinifera). Each grape contains grape seeds, which are usually mechanically separated on a sieve to make wine from the so-called ‚matoliny‘. Matoliny are the residual pomace after pressing wine or other fruit.
The crude oil needs to be stripped of its tannic substances by a refining process. Without this process, the oil would remain very bitter. The refining process produces a very high quality oil and uses a deodorisation process to rid the oil of unpleasant odours. The process is carried out under vacuum, so that there is no oxidation of the oil at high temperatures, which is usually blamed on the consumer. The oil achieves a much higher temperature change during cooking.
The nutritional value of refined oil compared to cold-pressed oil is essentially the same.
Carefully extracted grape seed oil contains approximately 90 % unsaturated fatty acids, of which the essential fatty acid linoleic acid accounts for the largest proportion. The intake of essential fatty acids is very important because we know that our bodies cannot synthesise these acids themselves. Laboratory analysis has confirmed a linoleic acid content of over 70%.
Grapeseed oil is very fine, with a slight green tinge. The oil is known for its high, naturally occurring content of OPC (Oligomeric proanthocyanide complex) – a complex of oligomeric prontocyanidins that acts as a powerful antioxidant.
