Without tempering and with a patina on the surface

In order to comply with the principles of raw product, we omit the so-called tempering during production. This process typically occurs at temperatures around 47°C or higher, which is why we avoid these temperatures when processing prawtein. The cocoa butter then naturally forms relatively stable, sharp-edged crystals, and partially released fat may rise to the product's surface, creating a patina.

Each prawtein contains different ingredients that can colour the resulting patina into different shades. However, these are not at all detrimental.

Beige shades – superfoods such as maca peruvian, carob… Green shades – herbs (five-leaved gynostemma, stinging nettle…) or seaweeds (saw kelp, Atlantic spirulina…). Additional colour variations may also appear, differing based on the specific types of prawteins.
