Maitake (Grifola frondosa), also known as hen-of-the-woods, is an edible vital mushroom growing mainly in the temperate zones of Asia, Europe, and North America. It forms rich clusters of fan-shaped caps that grow at the base of deciduous trees, especially oaks. Its Japanese name means dancing mushroom. In Japan, it has been valued for centuries not only as food but also as part of traditional care for vitality and longevity.

In the contemporary Western world, maitake attracts attention mainly due to polysaccharides, including beta-glucans, among which a specific group of substances known as D-fraction stands out. Modern research is investigating their properties and possible connections with immune and metabolic processes or antioxidant mechanisms.
