Why pepper essential oil doesn't burn
Black pepper essential oil does not contain piperine, a substance with a characteristic spiciness. This is because this substance is not aromatic and volatile. Because the essential oil, unlike the pepper itself, lacks pungency.
There is no pepper like pepper
There are over 2,000 varieties of pepper, the flavour of which varies in the way and place of cultivation. The four types of pepper most commonly encountered in the kitchen are: black, green, white and red. These colours are determined by the level of ripeness of the black peppercorn at the time of harvest.
