Why pepper essential oil doesn't burn
Black pepper essential oil does not contain piperine, a substance with a characteristic spiciness. This is because this substance is not aromatic and volatile. Because the essential oil, unlike the pepper itself, lacks pungency.
There is no pepper like pepper
There are over 2,000 varieties of pepper, the flavour of which varies in the way and place of cultivation. The four types of pepper most commonly encountered in the kitchen are: black, green, white and red. These colours are determined by the level of ripeness of the black peppercorn at the time of harvest.
Black pepper essential oil is a natural cocktail of hundreds of biologically active substances. However, the substances called β-Caryophyllene, D-Limonene, α-Pinene, β-Pinene and 3-Carene are considered to be pivotal.

A GLIMPSE INTO HISTORY
One of the rarest spices
Of all the spices, pepper has historically played the most important role. It was so highly valued throughout the ancient civilised world that it was nicknamed black gold. It was because of this that the most daring seafaring expeditions were undertaken and colonial empires were founded. Pepper came to Europe thanks to the military campaigns of Alexander of Macedon.
