An unassuming fruit with an imaginative history
Plums, at first glance, are an unassuming fruit, not generally attributed
with any particular significance. However, their role extends far beyond plum
cake. Historically, they played an important part in the development of early
societies, and it is only thanks to Slavic tribes that we Europeans can also
enjoy them. [1,2]
Exceptional oil from kernels
Initially, plums were cultivated primarily for their juicy pulp, and the
remaining stones were not further utilised. However, the advent of advanced
technologies led to the creation of an exceptional oil pressed precisely from
these leftover plum kernels. Due to its outstanding properties, plum oil has
become popular not only in the food industry but also in cosmetics. [1,3]
Composition and properties
Essential fatty acid linoleic acid
The main fatty acid contained is oleic acid, which makes up
to 70% of the total fatty acid content. However, the
interesting nutritional properties of plum oil are primarily due to the
essential omega-6 fatty acid linoleic acid, present in an
amount exceeding 20%.
Golden hue and naturally delicate aroma
Organic plum oil has a light golden hue and a very
delicate to neutral aroma, which is typical for this type of oil. An
intense almond or marzipan aroma is not its natural characteristic. On the
contrary – it is precisely the unassuming aroma that indicates
minimal technological intervention and the preservation of the
oil's natural composition. A more pronounced aroma usually only
appears during heating, refining, or partial oxidation, when aromatic substances
are released and enhanced. Thanks to gentle pressing, the oil retains its
purity, delicacy, and stability.
Production method
Cold pressing – the oil is obtained from plum
kernels at a temperature not exceeding 40 °C. The oil is intended
exclusively for cold cuisine.
Usage
For cold cuisine and delicate dishes
Organic plum oil is naturally neutral – without a strong taste or aroma.
It stands out primarily for its composition and high content of quality fatty
acids, which make it a nutritious oil for cold cuisine. You can use it in
salads, pasta, cold dressings, and finished dishes as a source of
fatty acids.
