YOU WILL NEED:

BEWIT Wild Mint essential oil
3 tablespoons of BEWIT Organic Coconut Oil
1 and 1/2 cup of cashews, pre-soaked for 4-6 hours (drain the water afterwards)
600 ml of full-fat coconut milk
1/4 cup of BEWIT Dried cane juice
1/4 cup maple (or agave) syrup
vanilla pod
a sprig of fresh mint
for sprinkling: BEWIT BIO RAW cocoa nibs
to prepare the flavouring mixture: 15 ml bottle with pipette
ice cream maker or a spoonful of vodka, white rum or bourbon

PROCEDURE

Prepare flavouring coconut oil with BEWIT Peppermint essential oil.


Pour the melted coconut oil into the glass. Open a bottle of essential oil and dip a wooden stick or toothpick into it.

Mix the oil in the glass. If the mint flavour is not strong, repeat the procedure. Proceed carefully.


Blend all the ingredients.

Start with nuts, add dried cane juice, maple syrup, flavoured oil and vanilla pod.

Finally, add the coconut milk and mix.

Add the chocolate pieces at the end.

Let the mixture cool in the refrigerator, transfer it to the ice cream maker and let it process.


If you don't have an ice cream maker, add a spoonful of alcohol, transfer the mixture to a shallow container, put it in the freezer and beat it with a fork or immersion blender every 40 minutes. The ice cream should be ready after about six hours.

When the ice cream is ready, stir in the chocolate chips. Transfer to the container in which you will store it, close it well or wrap it in cling film and let it harden in the freezer for about 5 hours.


Let it sit at room temperature for about 10 minutes before serving.

TIP: If you want to colour the ice cream green, we recommend adding a teaspoon of green barley, which increases the nutritional value of the ice cream.
