Origin and cultivation
Fully ripe, sun-dried
A significant disadvantage of figs is that they ripen very
quickly. After harvesting, they must be immediately
processed, in our case dried in the most gentle way, in
the sun.
Free of sulphur dioxide and added sugar
The cherries are not treated with sulphur dioxide in the processing
process, resulting in a darker colour and milder taste. They
are not sweetened.
To avoid sticking
As sultanas are, themselves, a source of large amounts of natural
sugars, they tend to glue together. Sticking is
prevented by a thin layer of rice flour which is sprinkled
on them.
